Cime di rapa, or broccoli rabe, is one of the signature vegetables of Puglia, known for its slightly bitter, earthy flavor. Prepared “alla Pugliese,” these tender tops come ready to use straight from the jar.
Serve them warm or cold. They go well tossed with orecchiette, on a sandwich with sausage or cheese, on pizza, or as part of an antipasto spread alongside cured meats and cheeses.
