Vinos de Pago

“Vinos de Pago” is a Spanish term that refers to wines produced from a single vineyard that shows unique characteristics in terms of microclimate and soil composition, that differentiate it from surrounding areas. The term falls under the production laws known as Denominación de Origen Protegida and wines labeled under this category must follow strict parameters: they must be made from grapes grown in a single estate, vinified and matured on property, and show exclusive qualities that represent the place of origin.  There are 24 vineyards certified to produce “Vinos de Pagos”; however, the term can be found in generic labels since Spanish laws allow wineries to use it if the name was registered before 2003.   

Most of the approved “pagos” are located in the region of Castilla-La Mancha.  This area is home to Pago Florentino, founded by Florentino Arzuaga of Bodegas Arzuaga Navarro.  This 100% tempranillo is aged for 12 months in French and American oak, presenting aromas of red fruits and toasted coffee.  It is a perfect accompaniment to meat paella and roasted pork.
