French oak barrels are produced from the species Quercus robur and Quercus sessiliflora grown mainly in five forests around the county (Allier, Limousin, Nevers, Troncais and Vosges), each imparting different profiles to the wine. Compared to its American counterpart, French oak generally imparts milder wood flavors with aromas of toast and spice, and a smoother texture. The tightness of the grain also changes depending on the forest the wood was harvested from, allowing for variations on the strength of flavors extracted from the barrel.  Also, its cost varies from $800-$2,000 per unit, double the price of an American oak barrel.

Delicate red grape varieties like Pinot Noir thrive with the elegant flavors of French oak, but it is also popular in the production of more structured grapes like Chardonnay and Cabernet Sauvignon around the world.
